- Fresh Pear Puree with rosemary and lemon juice
- Homemade Rosemary Clove Syrup
- Fresh squeezed and fine strained Lemon Juice

You Will Need

- Gin (see below recommendations)
- Brut Champagne or Sparkling Wine
- Shaker, large enough for 4 ½ oz per cocktail, plus ice

Spirit Recommendations

Bombay Sapphire - The crisp taste of Bombay, with hints of bright citrus and spice, pairs wonderfully with the Spiced Pear Collins. Large coriander seeds from Morocco release rich aromas of citrus and warm spice, perfect for creating exceptional cocktails.

Tanqueray London Dry Gin - Albeit lighter than Bombay, Tanqueray has a similar hint of spice and is another great option here.

Instructions

1. Pour ½ oz champagne or sparkling wine into (preferably chilled) cocktail coupe
2. In large shaker, combine 1 ½ oz pear puree, ¾ oz rosemary clove syrup, ¾ oz lemon juice, and 1 ½ oz gin
3. Add large ice cubes (so as to not dilute the cocktail) and shake vigorously for at least 15 seconds
4. Strain into coupe over the bubbles
